食物改變體質影響身體酸鹼平衡,是謬論。人體並沒有所謂的酸性體質、鹼性體質。人體內有三大系統在維持酸鹼平衡:緩衝系統、腎臟控制、呼吸系統,將血液的酸鹼值控制在7.35到7.45之間,維持一弱鹼性的環境。正常情況下,經由代謝所產生的非揮發性酸(氫離子),腎小管細胞會再吸收碳酸氫根離子(HCO3-; 鹼)使體內維持酸鹼平衡。
