香蕉表皮會出現黑斑，是香蕉在熟成過程中營養成分隨著成熟而變化，褐色斑點越多，香蕉就越成熟。有黑斑的香蕉，甜度高、味道最好，需盡快食用。但如果過份成熟，導致黑斑滲入肉體造成腐爛，就不宜再食用。不過，香蕉會出現黑斑，也可能是因為瘀傷、腐爛，或栽種過程中染上炭疽病及黑斑病導致。
